Technology: Health-care functional material development, anti-virus and immune regulation screening platform, health-care function evaluation, innovation and entrepreneurship cultivation.

Experience: R&D manager of Yuanjia Enterprise Co., Ltd., and residency in the Department of Food Science, Penghu University of Science and Technology.
Technology: research and development of functional peptides, hypotensive and anti-free radical functional products, research and development of aquatic functional products, development and application of food waste.
張素瓊
經歷：國立成功大學生命科學系名譽教授、國立成功大學生命科學系特聘教授、中華民國考試院考試委員、食品工業發展研究所學術倫理審議委員會審議委員、台灣保健食品學會理事長。
技術：探討功能性食品於老化肌肉流失之功效及其作用機轉、探討功能性食品減緩胰島素抗性及相關併發症之分子機轉(腎臟損傷、脂肪肝、周邊組織脂肪浸潤)、研究活化PPARs之功能性食品及其於代謝恆定之應用、透過基因體學及蛋白質體學研究功能性食品對於老化代謝平衡相關基因之調控。
